The source defines sustainable food as food produced with more attention towards the environment, animal welfare and/or social aspects than is obliged by law.

Not all expenditure in all supermarkets was measured. The 2013 figure covers approximately 68 percent of the market, the figures for 2014, 2015, 2016, and 2017 cover approximately 70 percent of the total food market. Starting in 2018, the source used a research method, which partly explains the sharp increase fom that year onwards in supermarket figures.

The figures have been taken from several publications.
