The product departments’ service deli in-store, deli packaged meat and self-service deli-refrigerated combined captured a share of 12.13 percent of total retail sales in 2017. Total deli department sales amounted to about 27.12 billion U.S. dollars in 2018.
As a single category, holiday meals had the highest level of sales growth of any fresh deli prepared food in 2018. In terms of deli entrees, pasta dishes made up the highest category share of sales, followed by pork and Asian dishes.
U.S. retailers are going to concentrate on enhancing deli operation areas such as staff training and rotisserie programs in 2017; as revealed by a recent survey.
